We’ll start with the ingredients you need:

  • Short ribs – 4
  • Salt and pepper – to taste
  • Canola oil – 1 tbsp.
  • Onion (roughly chopped) – 1
  • Garlic – 4-5 cloves (whole)
  • Carrot (large dice) – about 1 medium
  • Celery (diced) – ¼ cup
  • Leeks (chopped) – ¼ cup
  • Ginger – an inch piece
  • Bay leaves – 1-2
  • Spice mix (cloves, cinnamon, paprika, turmeric) – 2 tbsp
  • Tomatoes (chopped up) – 2
  • Chicken stock – 1 cup
  • Red wine – 1 cup
  • Tamarind paste – 1-2 tbsp
  • Brown sugar – 1 tbsp
  • Red wine vinegar – 1-2 tbsp

  • Brown sugar – 1 tbsp
  • Red wine vinegar – 1-2 tbsp

Now for the steps to make it:

  1. Step 1: Start by seasoning the short ribs with salt and pepper. Let it sit for about 5-10 minutes.
  2. Step 2: Add the canola oil to the preheated pressure cooker pot.
  3. Step 3: Sear the short ribs well on all sides. Use tongs to turn the meat around. The entire process should take between 8 and 12 minutes.
  4. Step 4: Remove the short ribs to a plate.
  5. Step 5: Continue with the vegetables in the same pot – no need to add anymore oil. Add in the onions, carrots, garlic, ginger, leeks, celery and bay leaves.
  6. Step 6: Stir and let it all caramelize for about 6 to 8 minutes.
  7. Step 7: Add in the spice mix now. And cook for another 1 to 2 minutes.
  8. Step 8: Add in the tomatoes.
  9. Step 9: Also pour in the chicken stock.
  10. Step 10: Add the red wine too.
  11. Step 11: Also add the tamarind paste, salt and brown sugar.
  12. Step 12: Now add in the red wine vinegar. Bring it up to a boil.
  13. Step 13: Put the short ribs back into pan and secure the lid in place.

Bring it up to pressure and set the timer to 20 minutes. It may take up to 30 minutes to complete cooking, though.
